Although it might seem simple to prepare, it isn’t, as cooking chicken to be tasty and tender requires skill. Simply throwing it on the fire and waiting for it to brown isn’t enough.
Get ready to surprise your friends and family with this recipe. Here’s the step-by-step guide to cooking chicken to perfection.
Marinate the chicken: To cook a good barbecue chicken, we recommend marinating the chicken before cooking it, and you can do it in different ways:
Season with cumin and lemon.
Rub with a mixture of olive oil, garlic, and salt.
Season with a mix of different herbs and spices. Another option is to marinate the chicken with barbecue sauce, chimichurri sauce, or hot sauce. We recommend seasoning the chicken the day before cooking it and letting it marinate in the refrigerator. You’ll get an exquisite result as the chicken will be much tastier.
Barbecue sauce:
Ingredients for Barbecue Sauce (10 oz):
1 medium onion
2 tablespoons brown sugar
1 tablespoon sweet paprika
1 tablespoon mustard
2 tablespoons honey
2 tablespoons ketchup
7 oz tomato sauce (better if homemade) or crushed tomatoes.
1 tablespoon soy sauce
4 tablespoons vinegar
1 tablespoon olive oil.
Ground black pepper and salt.
Wash and chop the onion. In a non-stick skillet with olive oil and medium heat, add the onion and a little salt and cook until it’s soft and transparent, without browning. When the onion is almost ready, add the sugar and stir well for a couple of minutes to caramelize the onion completely. Then, add the tomato sauce and stir well, let it cook together for another couple of minutes. Add the rest of the ingredients: sweet (or spicy) paprika, mustard, honey, ketchup, soy sauce, vinegar, ground black pepper to taste, and Tabasco (optional, only if you want to give it a spicy touch). Let everything cook over low heat for 5 minutes, stirring occasionally and making sure it doesn’t stick. Taste the sauce to adjust its flavor to your liking.
Preparation of barbecue chicken
Ingredients for chicken with homemade barbecue sauce (serves 4):
3 ½ lbs chicken
Ground black pepper
Extra virgin olive oil
Salt to taste
Wash and marinate the chicken before putting it on the grill. Prepare medium heat and place the chicken on the grill with the skin side up to cook well on the inside but without drying out the outside. Once the meat is ready (about 30 or 35 minutes), turn the chicken over so that the skin side is down this time. Cook it until the skin is well browned. To know if the chicken is done, pierce it with a knife trying to reach the bone. If the knife comes out wet with a pinkish hue, the chicken is not yet ready. We must wait a little longer.
If the knife comes out wet but with a clear color, it means the chicken is done, ready to eat. If, on the other hand, the knife comes out dry… it means we’ve cooked it too long. But it’s too late, be careful next time. It’s better to check occasionally than to leave it for too long.
